Of 4 bucklings: two were 25lbs each, while the other two were 28 & 31 lbs.

Carcass yields are approximately 50% of live weight.  As you can see from these photos, there is very little fat on these animals.  This is the way "veteran" consumers prefer their meat.

 

 

 

The meat hangs several days prior to packaging.  Organ meat is retained in the chest cavity.
